The Gherkin is a vegetable similar in form and nutritional value to a cucumber. Gherkins and cucumbers belong to the same species (Cucumis sativus) but are different cultivar groups. Gherkins are baby cucumbers that are used in pickling either in whole or in slices, stackers and chips.
Sometimes also called a Cornichon (the French word for gherkin), they have historically also been called horned cucumbers, crumplings, and gherkins. Depending on the type of pickles prepared in sweet or sour tastes, they are bottled and preserved in Acetic acid, Vinegar or Brine medium. The sizes of the Gherkins vary from 2-5cm, 3-6cm, 6-9cm, 9-12cm, etc.
